
Ingredients (for 3 tacos)
* 200 g canned chickpeas
* 3 corn tortillas
* 1 small tomato, diced
* 1/2 carrot, grated
* 1 small avocado, smashed
* 3 tbsp Coconut yogurt
* Lime
* 1 tsp Vegan Life
Instructions
* Add the olive oil to a pan over medium heat. Once the oil begins to shimmer, add the chickpeas (previously drained and rinsed) and cook until slightly golden, stirring occasionally.
* Add Vegan Life to the chickpeas and sauté for 3-4 more minutes, until golden brown.
* Serve on warm tortillas with smashed avocado and lime, carrots, tomato and coconut yogurt. Enjoy!
