
Ingredients (4 people)
- 4 courgettes
- 500g broccoli
- 2 carrots
- 200ml coconut milk
- 1 tablespoon of Veggie Seasoning
- Sea salt
- A drizzle of olive oil and a few coriander or mint leaves
Instructions
- Bring water to a boil.
- Wash your vegetables and cut them into small pieces.
- Place them in the pan and boil for 15 minutes.
- Remove the vegetables from the water, add the spices and put them in a blender.
- Mix them until you get a thick homogeneous mixture. Add the coconut milk.
- Put everything in a saucepan and heat it.
- Check the seasoning and serve hot with cilantro and a drizzle of olive oil.
