Pepper or piper negrum is a particularly rare spice, used as currency since the Middle Ages by Arab merchants. Its cultivation quickly spread to Sumatra and then to Vietnam, Brazil and Jamaica. Our black pepper is harvested in Vietnam, more precisely on the island of Phu Quoc. To get white pepper, pepper berries are harvested when ripe, and soaked in water to remove the skin. The grains are then dried to obtain small white peppercorns.
